Magical Garden














 

September greetings from the Magical Garden! Although the part of our garden where we grow vegetables is modest, we are overwhelmed with squash and tomatoes by the end of every summer. This month we'll share a few of our favorite recipes and some zucchini links.

~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~ Sauteed Zucchini, Tomatoes, and Onions
1 medium zucchini, sliced
1 medium yellow onion, chopped
2 tomatoes, cubed
1 Tbl olive oil
2 garlic cloves, minced or pressed
Other vegetables (bell peppers, mushrooms, whatever's in your garden or your refrigerator) (optional)

Heat a frying pan over medium high heat. Add oil and garlic. Saute for one minute until garlic is brown. Add onion. Saute until onion is browned, about 5 minutes. Add zucchini, tomatoes, and other vegetables. Saute until zucchini is tender but not soft. Even the kids loved the sweet carmelized onions contrasted with the acidic tomato.

Zucchini Bread - the standard from Family Circle, June 1991
2 c. all-purpose flour
1.5 tsp. salt
3 tsp. cinnamon
1 tsp. baking soda
1/2 tsp. baking powder
1 c. oil
3 eggs
1 tsp. vanilla
1-1/2 c. sugar
3 c. shredded zucchini
1/2 c. chopped walnuts
1/2 c. raisins

Preheat oven to 350F. Grease two small loaf pans. Sift together flour, salt, cinnamon, baking soda, baking powder. In a large bowl whisk together oil, eggs, vanilla, sugar. Stir in flour mixture and remaining ingredients. Divide into prepared pans. Bake for 55-60 minutes or until cake tester comes out clean. Cool on wire racks to room temperature.

Basil, Cheese, and Tomato sandwich - Karen's favorite
2 slices of bread
4 fresh basil leaves
1 tomato, thinly sliced - room temperature
1 slice of cheese (to cover the piece of bread)
3 slices of vegetarian breakfast strips or bacon, cooked
mayonnaise

Toast the bread if not fresh. Spread with mayonnaise. Top with the rest of the ingredients and enjoy! The fresh basil perfectly complements the fresh tomato. Be sure the tomato is room temperature - fresh picked, warmed by the sun is best. Makes one perfect sandwich.
